The Sazerac

Ingredients

• 2½ oz rye
• ¼ oz simple syrup
• ~5 dashes Peychaud's bitters
• Absinthe, to rinse the glass
• Lemon peel, for expressing

Steps

1. Rinse a chilled glass with absinthe, coating the inside, and discard the excess.
2. In a mixing glass with ice, combine the rye, simple syrup, and Peychaud's bitters.
3. Stir, then strain into the absinthe-rinsed chilled glass.
4. Express the lemon peel over the drink last.

Notes

• Doubled (two drinks): 5 oz rye, ½ oz (3 tsp) simple syrup, 8 dashes Peychaud's.
